Inspiring vegan French Pâtisserie
“Our ambition for Café Forty One is to create an exceptional and passionate vegan cuisine that stands out against the current vegan offering in London that simply meets the demand. We are determined to create visually stimulating dishes that will not only change the stereotype of vegan food as tasteless and unimaginative, but will cater for everyone, not just vegans.”
Following an undetectable chronic digestive system illness, Clarisse started developing an interest for nutrition and began her own research into food preparation and its impact on our health and the environment.
Having trained in pâtisserie in France and England, and realising that the vegan or gluten free options were close to none with the majority being sugar heavy, Clarisse began researching and creating delicate vegan delights herself.
Clarisse subsequently launched her own business, The Sunny Spoon, in 2015 and spent a year working in the most luxurious hotel in St Barth’s, pleasing celebrity wellness-orientated diners with her new vegan menu options.
Now Head Chef at La Suite West, Clarisse matches the hotels’ ambition to develop the first fully vegan hotel in London with her menus taking inspiration from all around the world.
