Article plublished by @thecaterermag Sales of plant-based foods have increased by 40% from £582m in 2014 to £816m in 2019 as meat-eaters opt for vegan alternatives, according to research by market research firm Mintel.... As the meat-free market becomes increasingly crowded, brands will need to find more ways to distinguish themselves from their competitors – it’s no longer enough to just be meat-free. Meat-free products are generally aimed towards young professionals, who tend to be receptive to trying new foods, but we are also likely to see these products targeted at both children and over-55s in the future...

NEW AUTUMN MENU
Chef's new menu not only takes inspirations from her Italian and Japanese roots but also takes inspiration from her family members. Ayako's Pancakes were a family favourite created by Chef's Japanese mother and the lemon and lavender Torta Della Marcella is a tribute to her Italian Nona. Having sampled the new menu... the Nippon (Japan) Burgerwith tamari aioli and the Breakfast Pancakes with homemade nutella are delicious. The Chocolate Torta is off the chart... thats why it stayed on the menu for another season! Surprised we weren't. Enjoy.

I did not stay at Cafe Forty One, but had a wonderful afternoon dining outside. My sister, a friend and I opted for the vegan afternoon tea with a non alcoholic fizzy beverage. Our friend is vegetarian, but my sister and I are carnivores, however, we are open to new or different experiences and have a few vegan friends so have eaten some vegan food before. As soon as we arrived at the hotel we were made to feel welcome and were given the choice about where we wanted to dine, inside the restaurant or outside. Once seated we were provided with menus, to select our teas or coffees and from that moment onwards the staff were polite, friendly, attentive and approachable. The afternoon tea was presented beautifully and delicately with bright colours, almost too pretty to eat. We agreed unanimously that everything we had eaten was delicious. The sandwiches were dainty, moist and flavorful (my favourites were the cashew nut butter and pickle and the watercress and tofu?). The pastries were light and incredibly tasty, especially the coconut flavoured one. The coconut spread was divine and went perfectly with the scones. I have eaten some vegan food before, but never afternoon tea. I thought the concept was very creative and executed beautifully. One of our hosts, unfortunately I do not recall her name, highly recommend the burger next time we visit. I am eagerly anticipating our next meal at Cafe Forty One.

MEET CHEF YUMIKO SCINTU
Tell us a bit about your background as a chef?
I have always been passionate about food. Everything we did as a family centred around eating. My mother studied at culinary school and in the early days, way before I was born, my parents had a food stall in Camden Market. My father used to be a chef, specialising in Tuscan cuisine, so each night was spent eating indulgent three course meals at home. Summer holidays were spent in Japan where practically all my most vivid memories somehow always relate back to food. My family inspired and built the foundations for this menu.
As a result of becoming ill in 2012 I discovered and adopted a raw food plantbased diet which helped to heal my health problems. I worked in broadcasting for nearly 10 years but never felt fulfilled. Whilst still working I invested in a two-week intensive Vegan Diploma at Demuths Cookery School in Bath which convinced me that this was what I was destined to do. I went on to study with several leading plantbased Chef’s, including the raw food pioneer Matthew Kenney, attending the Matthew Kenney Culinary school in Thailand. Worked in the kitchens of Tickles Pickles, Nama Artisan Raw Foods, Essence and Plates.
The knowledge I have gained surrounding plantbased cuisine, coupled with my Italian and Japanese heritage, has ultimately been the inspiration behind creating the menu and culinary vision which I am delighted to be evolving at Café Forty One.

NEW AUTUMN MENU
We launched our new Autumn Menu last week. The Team at the hotel tasted and tested the menu for our guests last Thursday. Some of the favourites have stayed for example the Mushroom Bourguignon Pie & Mash and Chef has introduced exciting new dishes made from the best ingredients of the season. One of Head Chef Clarisse Flon’s signature dishes is 'Alpine Ravioles with fresh slaw, sundried tomatoes and a smoky glaze'. Ravioles are a speciality from the French alps where she grew up. Usually made with Tome, a hard cheese from cow’s milk, Clarisse has developed a vegan version with the great vegan cheese provided by our amazing supplier IAMNUTOK.
