NEW AUTUMN MENU
We launched our new Autumn Menu last week. The Team at the hotel tasted and tested the menu for our guests last Thursday. Some of the favourites have stayed for example the Mushroom Bourguignon Pie & Mash and Chef has introduced exciting new dishes made from the best ingredients of the season. One of Head Chef Clarisse Flon’s signature dishes is 'Alpine Ravioles with fresh slaw, sundried tomatoes and a smoky glaze'. Ravioles are a speciality from the French alps where she grew up. Usually made with Tome, a hard cheese from cow’s milk, Clarisse has developed a vegan version with the great vegan cheese provided by our amazing supplier IAMNUTOK. Head chef Clarisse Flon tells John Turnbull why she wants to revolutionise French cooking
We are so excited that Head Chef Clarisse was featured in the Weekend supplement of The Times - Page 7 of the Body + Soul section, ''How the French go vegan: beefless bourgignon, chickpea meringues'. Her speciality is French Pâtisserie which enables us to boast our position in the London restaurant scene as the 'only' vegan French Pâtisserie in London! Menus are inspired by her travels and multicultural London, Clarisse loves a twist on a good classic to show that there’s nothing to lose and everything to gain from veganism.
